February 2006 Winning Recipe

Recipe Title: Peanut Butter Puff Brownies

Ingredients:

  • 1 box Pillsbury Brownie Classics Traditional Fudge Brownie Mix
  • ½ cup canola oil
  • ¼ cup water
  • 2 eggs
  • ¾ cup + 1/8 cup peanut butter chips
  • 2 cups Reese’s Puffs Whole Grain Cereal, crushed (place into a baggie and smash with a rolling pin)
  • 2 tablespoons brown sugar
  • ¼ cup toffee chips, ground in a coffee grinder (or crushed fine in a baggie)
  • 4 tablespoons butter, melted
  • 3 ounces caramel ice cream topping
  • 1/8 cup mini chocolate chips

Instructions:

Preheat oven to 350° F. Grease bottom of a 13”x9” glass baking pan, and set aside.

In a large bowl, combine brownie mix, oil, water and eggs; beat for 50 strokes, until blended. Mix in ¾ cup peanut butter chips, and pour into prepared pan.

In a medium bowl, combine crushed cereal, brown sugar and ground toffee chips. Pour in melted butter and mix with a fork until crumbs are moistened. Sprinkle crumb mixture over brownie batter, and press lightly with a fork to adhere.

Melt together caramel sauce, remaining 1/8 cup peanut butter chips and chocolate chips; stir to blend. Using a spoon, drizzle caramel mixture over crumb topping.

Bake for 35 minutes, until a tester comes out clean. Let cool, then cut and serve.

This is probably my most requested recipe. It’s great for lunchboxes, for afterschool snacks, for potlucks, for gifts … you name the occasion, these brownies are perfect!
